APPLE JALEBIS

Batter-coated apple rings fried till crisp and coated with fragrant saffron-flavoured sugar syrup… doesn’t that sound heavenly? it is! apple jalebi is nothing short of a delicacy, especially if served immediately after preparation. To make sure your jalebis are perfect, you need to be tactful when dipping the apple slices in the batter, because you need to dip them quickly yet carefully!

Ingredients:

500 gms apples

2 cups self raising flour

1/2 tsp baking powder

1 cup yogurt

Vegetable/canola/sunflower cooking oil for deep frying

FOR SUGAR SYRUP

1 cup sugar

Few strands saffron

1/4 tsp cardamom powder

2 drops orange food colour

2 tbsps rose water

 

Preparation:

  • Peel apples and remove the core fron the center without breaking the apple
  • Cut the apple into roundels (like pineapple slices) without breaking them
  • Place apples in water which has sugar and lemon juice to avoid oxidation of apples
  • Mix the flour, baking powder and yogurt into a batter and keep aside for 24 hours to ferment or alternately add 5 gms of baking powder to the batter to hasten the fermentation
  • Heat ghee in a deep  frying pan and reduce the temperature of the ghee to a sizzle
  • Remove the apples from the water and pat them dry
  • Dip the apples in the batter and deep fry in warm ghee to an even golden brown colour ensuring that they do not become black on frying
  • When done remove from ghee and remove excess ghee
  • Put in a hot sugar syrup for them to absorb the sugar syrup
  • Serve hot with ice cream
