From Rubeka’s Kitchen: Varadi Chicken

Varadi chicken is one of the well known dishes of Vidharbha region of Maharashtra. Varadi cuisine is a more on a spicier side. The dishes prepared here are more exotic and spicy than that of their coastal and southern counterparts.

Ingredients:
500 gms Chicken
2 bay leaves
5-6 pepper corns
5 cloves
2-3 black cardamom
1 cinnamon stick
100 gms peanuts
½ cup dalia
½ cup raw rice
4-5 whole red chilies
1 tsp mase
1 star anise [chakra phool]
1 tsp rock flower
1 tbsp shah jeera
1 tbsp jeera
2 tbsp coriander seeds
100 gms khus khus
100 gms dry coconut [sliced]
5-6 onion [sliced]
Salt to taste
1 tsp haldi
1 tbsp red chili powder
2 tbsp Ginger-garlic paste

Method:
Marinate chicken in a vessel add salt, haldi, red chili powder, dhaniya-jeera powder, ginger-garlic paste, oil and mix well. Marinate for at least 1 hr.

Varadi masala:
Take oil in a kadhai add oil, onion, coconut, khus khus, coriander seeds, jeera, shah jeera, peanuts, dalia, rice, cinnamon, black cardamom cloves, peppercorns, bay leaf, mace, star anise, rock flower, whole red chilies, roast them all and grind them to make its paste.

Take oil in a saucepan add varadi paste, add ginger-garlic paste, salt, haldi, dhaniya-jeera powder, red chili powder, keep stirring, add chicken and mix well add water and cook till chicken gets cooked.

Put it into serving dish and garnish with chopped coriander leaves.

Serve hot.
