Stuffed Karela
This recipe is fabulous Punjabi cuisine very easy to make, and good for winters, make it and enjoy with rice and roti.

Ingredients:

6 large Karelas [not too ripe]
1.5 tbsp oil
1 large onion [fine chopped]
1 tsp mustard seeds
2 tbsp Gur
2 cloves of garlic [fine chopped]
1/2 inch piece of ginger [fine chopped]
1/2 tsp red chili powder
150 gms tamarind [make pulp in 1/2 cup water]
50 gms besan
1 large green chilly [fine chopped]
Salt to taste
Ghee or oil to fry.

Method:

Remove rough top skin of the karelas leaving the inner skin smooth and intact.
Parboil in salted water.
Remove from water, dry and cold.
Make a slit length wise on 1 side of the karela and remove the seeds and pulp.

Stuffing:

Heat oil in a pan and brown the onion till golden.
Add mustard seeds and gur. When gur melts, add garlic, ginger, red chili powder and cook for 2-3 mins. Add tamarind pulp, mix well and stir in besan, green chili and salt till we blended and like soft dough. Remove from fire. Keep it aside to cool it.
Stuff into the slit karelas. Press to close opening and tie around with thread. Before serving heat oil in a pan and carefully place karelas in very hot oil. Fry till cooked properly.
Serve hot and Enjoy.
