From Rubeka’s Kitchen: Pizza Paratha

Pizza paratha is a combination of Indo-Italian cuisine just an easy experiment to try and make in less time. Tastes yummy.

Ingredients:

For Paratha:
2 cups Maida
salt to taste
oil as required
water as required

For Filling:
2 tbsp Pizza sauce
100 gms Mozzarella cheese
100 gms chicken [boneless and shredded]
20 gms canned mushrooms
5 black olives [sliced]
Salt to taste
Black pepper powder
Chili flakes
Oregano
[P.S. You can use toppings as per your taste]

Method:
Make a soft dough with Maida, salt and water. Add few drops of oil and keep it aside for 20mins.

Boil the chicken with salt and pepper and let it cool.

Divide the dough into equal sized dough balls. Lightly dust a medium sized ball of dough. Roll it into 6 to 7 inches diameter thin disc. sprinkle flour while rolling. Apply ghee or oil liberally on the paratha disc. Sprinkle some whole wheat flour on top. From the edge start folding and pleating it till the end. Roll the pleated dough in a tight circle. join the edges. Dust some flour and now start rolling again.

rolled lachedar paratha ready to be put on griddle. Heat the griddle. Place the paratha on the hot griddle. Turn the lachha paratha when one side is partly cooked. Apply ghee/oil on this side

now turn again and apply ghee or on the other side. Flip again for a couple of times, till the parathas are browned evenly and well cooked. Press the sides with the spatula while frying the parathas. Sim the flame and apply pizza sauce on the top of the paratha spread Mozzarella cheese, boiled chicken, mushrooms, olives, salt, chili flakes, oregano and fold the paratha into half and press the corners and cut it into 3 slices.
