From Rubeka’s Kitchen: Spaghetti Bolognaise

SpaSpaghetti bolognaise is an Italian dish. Bolognese sauce is a meat-based sauce for pasta which originates in Bologna, a city in Northern Italy. A thick, full-bodied meat sauce that’s a staple of northern Italy’s Bologna. The term alla Bolognese on a menu designates a pasta or other dish sauced with ragù, which is a meat based sauce.

Ingredighetti:
500 gm Tomato
1 tbsp Olive oil
1 onion [chopped finely]
500 gm Minced Meat
1 Clove garlic [crushed]
½ Cup tomato paste
¼ Cup meat stock
½ tsp Sugar
½ Cup dry red wine [optional]
2 tsp Fresh oregano
1 tbsp Fresh basil [finely shredded]
1 cube processed cheese
3-4 cherry tomatoes
5-6 capers

Method:
Heat oil in a big saucepan and cook onion and garlic in it on medium heat till onion is soft, keep stirring.
Add meat to the pan, stir continuously on high flame till well browned.
Crush the tomatoes using potato masher.

Add tomato paste, wine, stock, sugar and crushed tomatoes and bring it to a boil.
Reduce the heat, covered and simmer for about 30 minutes till meat is tender and mixture thickened slightly.
Now stir through herbs.

Meanwhile, cook pasta in a big saucepan of boiling water, uncovered, till just tender, drain.
Take butter in sauce pan add cherry tomatoes and capers boiled spaghetti and sauté a bit.
Arrange spaghetti on the serving dish, pour the sauce on it, garnish with basil and grated cheese.
Now serve sauce over spaghetti.
