From Rubeka’s Kitchen: Mulligatawny Soup


This delicious Anglo-Indian soup is a product of the British Raj in India. It is a National Soup of India. Mulligatawny is chicken-vegetable soup flavored with Indian spices

1 tsp Jeera
1 tbsp coriander seeds
1 tsp khus khus
1 tsp haldi powder
3-4 medium onion [chopped]
2 cloves garlic [chopped]
2 cups chicken stock
1 cup thick coconut milk
Salt to taste
1 cup diced chicken [boiled]
1 tbsp butter
1 tsp lemon juice

Boil the masala, half the onion, garlic salt and stock for 20 to 25 mins. Strain and keep aside. Sauté rest of the finely chopped onion in the butter till golden brown. Add the strained stock, chicken, coconut milk and lemon juice. Simmer together for 4 to 5 mins.
