From Rubeka’s Kitchen: Cream of Tomato Soup


Cream of tomato soup is one of the top comfort foods in Poland and the United States. Good to taste and healthy to eat, less ingredients and easy to make.

1 kg Tomatoes
Salt to taste
Pepper to taste
Sugar to taste
1 tbsp butter
1 tbsp refined flour
1 cup milk
½ cup cream
2 slice bread [cube & fry]
1 tsp vinegar or lemon juice

Place tomatoes in a pan and cook without any water till soft and pulpy. Strain through n fine strainer.

Add salt, pepper and a little sugar if the tomatoes r too sour. Add a few drops of vinegar or lemon juice. Keep aside. Melt butter, add flour and cook for a couple of minutes. Gradually stir in the milk and cook to make a thin sauce. Remove from fire and cool. Gradually blend in the tomato pulp. Correct seasoning and bring to the boil. Put a teaspoon of cream in each serving and serve hot with fried croutons and a basil leaf on the top.
