A quesadilla is a wheat tortilla or a corn tortilla filled with cheese, a savory mixture, chicken, meat, fish or vegetables, cooked often on a griddle originally from Mexico, could be made in breakfast or as starters.
2 tbsp oil
½ green capsicums
½ red bell pepper
1 red onion [juliennes]
1 bowl chicken breast [small cubes]
Salt to taste
Pepper to taste
1 tbsp Barbeque sauce
1 tbsp butter
½ cup mozzarella [grated]
1 tbsp Parsley
½ cup cheddar [grated]
Take oil in a grilling pan add onion and sauté for sometime add garlic, capsicum, bell pepper and mix well.
Add chicken and sauté, season with salt and pepper and stir well, add barbeque sauce and cook till chicken is fully cooked. [Add little water if necessary, cook till dry]. Keep it aside.
Take butter in a pan. Keep a tortilla on it. Make a layer of mozzarella cheese on top of it make a layer of chicken mixture. Sprinkle some parsley and make a layer of cheddar cheese, put a tortilla on it and flip it.
Cook for 1 min and take it out.
Cut it into 4 parts and serve hot with barbeque sauce.
